Introduction

This serves as a great base for a variety of pizzas. You can top with loads of veggies, mushrooms, even chicken for some extra protein. Just grill up your toppings in a small pan while preparing the rest of the pizza. Minced garlic, slightly browned in a pan is a delicious alternative to the garlic powder in the recipe.


I used Fiber One Multi-Grain English Muffins in my calculation as they are delicious while containing 8 grams of fiber and 5 grams of protein per muffin.

Ingredients

    1 English Muffin
    1 tsp Olive Oil
    2 Tbsp Pizza Sauce
    1/8 cup (.5 oz) Shredded Mozzarella Cheese, Part Skim
    1 tsp Oregano
    1 tsp Garlic Powder

Directions

Split english muffin in half. Toast for 2-3 minutes (longer for a crispier crust or leave out this step altogether for a softer crust).

Remove from toaster/oven and brush with olive oil.

Spread pizza sauce and mozzarella cheese evenly on english muffins.

Top with oregano and garlic powder.

Cook in toaster oven (or conventional oven) at 400 for 5-10 minutes until desired amount of crispiness is achieved.
