Introduction

This was more of a "splurge" for us than a healthier meal choice. I just didn't want to overdo the fat so I used leaner versions of our favorite pizza toppings by using turkey products rather than beef or pork products.

Ingredients

    Pizza Dough
    1 1/4 cups very warm water
    1 packet dry yeast
    3 3/4 cups whole wheat flour (I used the lighter version by king arthurs)
    2 TBS olive oil
    2 TBS coarse sea salt
    2 TBS sugar
    2 TBS minced garlic
    2 TBS italian seasonings
    Pam non-stick spray
    2 TBS White Corn Meal

    Sauce
    1 jar Ragu pizza sauce
    1 can tomato paste
    2 TBS minced garlic
    1 TBS splenda
    1 TBS italian seasoning
    1 TSP dry oregano
    1 TBS dry basil

    TOPPINGS
    3 Hot Italian Turkey Sausages cooked
    16 slices turkey bacon cooked
    68 slices turkey pepperoni
    1 cup chopped green onions
    1/2 cup pineapple tidbits
    4 cups part skim mozzarella cheese shredded

Directions

In a large bowl dissolve yeast in the warm water for 5 minutes. Add in the next 6 ingredients and blend till it all comes together. ( I generally use a heavy duty mixer with a dough hook but this can be done by hand) Turn dough out on to a floured surface and knead till smooth and elastic. If using the mixer, mix on low speed approximately 10 minutes. After kneading spray bowl with Pam and then place dough in the bowl and lightly spray the top of the dough. Allow to rise in a warm draft free area approximately 1 1/2 hour.

While the dough is rising prepare the remaining ingredients.

Sauce
Put all ingredients in a small sauce pan and cook until the tomato paste is dissolved and the sauce is heated through.

Toppings
Cook the sausage per package instructions then cut into small 1/4 inch rounds. Cut the bacon into small pieces and crisp in a frying pan. The pepperoni can be used straight out of the package. Strain the pineapple.

Preheat oven to 450 degrees.
After dough has risen punch dough down and divide into two balls. Flatten each ball into 12 inch round disks by pushing, rolling and stretching until you get the desired size. Dust a pan or baking stone with 1 TBS of corn meal and place dough one at a time on the pan to top with half of each remaining prepared ingredient.
Top each pizza with 2 cups of mozzarella cheese.
Bake in 450 degree oven till cheese is melted and bubbly and beginning to brown. Approximately 25 minutes per pizza. Note: Bake one pizza at a time or the crust or top will not cook properly.

This recipe makes two pizzas. Cut each pizzas into 8 equal pieces. Each piece is one serving.
Yield 16 servings.
