Ingredients

    2 lbs butternut squash, peeled, seeded & cubed (about 1")
    3 tablespoons butter
    1 teaspoon black pepper (or more - use a lot)
    1 teaspoon salt (adjust to your own taste or sodium level)
    1-2 cups water or 1-2 cups fat-free broth

Directions

Bring water or optional broth to a boil. Add squash & salt, cover and simmer for 5 minutes. If your cubes are larger, you may need more time. they should be just tender. Drain.
In skillet, cook butter until it darkens to a light brown. Toss squash cubes in butter, then add freshly ground black pepper. Serve right away.
