Introduction

I accidentally purchased a tin of crushed tomatoes in place of diced, but the chili still turned out tasty!

This recipe has the consistency closer to spaghetti sauce, and I bet it would be delicious over pasta. If you'd prefer a chunkier texture, use diced tomato in place of crushed.

Ingredients

    Ground beef, extra lean, 500 grams (remove)
    4 Garlic cloves, minced
    1 tbsp Chili powder
    1 tbsp dried oregano
    3 Chipotle Peppers in Adobo Sauce, minced
    1 medium green pepper, chopped
    1/2 Zucchini, chopped
    1 medium red bell pepper, chopped
    1 large onion, chopped
    1 19oz tin of white kidney beans, rinsed and drained
    1 28oz tin of crushed tomatoes

Directions

Cook beef, garlic, chili powder and oregano in a large pot or dutch oven over medium-high heat until the meat is no longer pink. (5-7 minutes)

Add in the vegetables and chipotles, stirring to coat everything in the seasoning.

Gently mix in the beans, careful not to crush them. When mixed in, add tomatoes and stir. Cook uncovered until the mixture starts to bubble and boil.

Reduce heat to medium-low and simmer for 30-45 minutes to enhance flavours.

Serve with lo-fat plain yogurt or sour cream.
