Ingredients

    1 cup Simply Potatoes Shredded Hashbrowns
    2 Large Grade AA eggs
    1/2 cup Green Bell Pepper
    1/2 oz Red Onion
    1 tbsp Margarine
    1 tsp Tabasco Sauce
    1 dash Salt
    1 dash Black Pepper

Directions

Dice red onions & green bell peppers
Spray skillet w/ non-stick cooking spray.
Spread Hashbrowns in a thin layer in skillet and .press down lightly w/ spatula.
Cook hashbrowns for 6-7 mins on each side.
Melt margarine in a serperate skillett, add onion & bell peppers & sautee.
When hashbrowns are cooked thoroughly add eggs, sauteed onions & bell peppers.
Let cook until eggs are cooked thoroughly, mixing all ingredients together.
Add a dash of salt & pepper (optional)
Add tobasco sauce to taste (optional)

Makes 1 1.5 cup serving
