Introduction

A slightly spicy, very easy and VERY TASTY shrimp dish! A slightly spicy, very easy and VERY TASTY shrimp dish!
Number of Servings: 5

Ingredients

    1/2 a box of whole wheat pasta (Healthy Harvest spaghetti used in the calculations, but any pasta can be substituted in easily)
    1 bag - cooked, deveined medium shrimp (approx. 25)
    1 can - tomato paste
    2 cans - stewed tomatoes
    1 lg. sweet yellow onion
    5 garlic cloves
    1 tbsp. red pepper flakes
    1 tbsp. evoo
    3 cups of spinach

Directions

Thaw and de-tail shrimp, if necessary.

Heat 1 tbsp of extra virgin light olive oil in a large pan. Slice large onion into thin rings. Press garlic cloves with flat side of a knife to release more flavor. Add to onions, garlic and red pepper flakes to heated oil with a lid to prevent oil splatter.

Begin to boil and cook pasta with a dash of salt in a separate pot according to pasta directions.

While pasta cooks and onions carmelize, open tomato paste and stewed tomatoes. When onions are finished carmelizing, add the cans of stewed tomato and tomato paste to the pan. Add fresh spinach and cook until spinach begins to wilt.

When the spinach/tomato mixture is thoroughly heated and spinach is wilted, add shrimp and let simmer for a few minutes to heat the shrimp.

Drain pasta.

Add one cup of pasta to one cup of spinach/tomato/shrimp sauce, and enjoy!




Serving suggestion: Serve with a side salad and a glass of wine to complete the festivities!
