Introduction

My dear friend Dorothy makes this especially during Lent when we are looking for meatless meals. My dear friend Dorothy makes this especially during Lent when we are looking for meatless meals.
Number of Servings: 12

Ingredients

    1 Bag sauerkraut
    1/2 small head of cabbage cut small pieces
    2 cans kidney beans- drained
    1 firm apple - chopped
    2 cups (or more) water
    2 cups vegetable stock (beef or chicken stock if not going meatless)

Directions

Combine all ingredients in a slow cooker set to high.
Cook for about 5-6 hours.
(not included in the ingredients - cause I forgot to do it) Dorothy says to make a rue - melt a tablespoon of butter add a little flour and stir and cook until it begins browning and add to the soup to thicken - but mine was fine w/out thickening.
makes about 12 1-cup servings.
