Introduction

A twist on classic tabbouleh, but with quinoa instead of bulgar wheat. A twist on classic tabbouleh, but with quinoa instead of bulgar wheat.
Number of Servings: 10

Ingredients

    1 cup Quinoa
    1/3 cup Extra virgin olive oil
    1/3 cup Lemon juice
    1 cup Finely chopped scallions
    2 cup Lightly packed chopped fresh parsley
    1/4 cup Chopped fresh mint
    3 Tomatoes, diced
    1 Cucumber, peeled, seeded, and chopped
    1 tsp Salt
    1 dash Pepper

Directions

Makes 10 servings (about 2/3 cup or 150mL each)

Rinse quinoa very well, and cook according to package. Drain well. Toss with oil, lemon juice, scallions, parsley, mint, tomatoes and cucumber. Cover and refrigerate for at least 1 hour (better if left overnight). Add salt, and pepper to taste.
