Ingredients

    pork spare ribs, 2 lbs (weight includes bone, loin meat not included in this cut)
    paprika 2 tsp
    salt 1.5 tsp
    black pepper 1.5 tsp
    brown sugar 1.5 tsp
    granulated sugar 1 tsp
    cumin seeds, ground 1.5 tsp
    red pepper flakes, ground, 1.5 tsp (or cayenne peppter 1 tsp)

Directions

Rub the combined spices all over and let the meat sit for 1-8 hours in the tray you plan to cook it in. We use a large glass caserole. For best results, allow meat to warm up to room temp again before cooking (we leave ours on the counter for 1 hour because it comes from a local butcher). Cook in 400 degree oven for 15 mins, then at 275 for 3 hours.
