Ingredients

    2 pounds of frozen Birds Eye Oriental Stir Fry Vegetables
    1.5 pounds of chicken breast or tenders, cubed
    2 T of Olive Oil, divided
    3 cups Minute Rice

Directions

Cut chicken into bite size pieces and stir fry in 1 T olive oil until done, remove and keep warm. Cook Minute Rice according to package directions. Heat 1 T of olive oil on medium-high heat. Add 1/2 package of vegetables. Cover and cook for 5 minutes, stirring occasionally. Add contents of 1 sauce pouch and stir. Cover and cook an additional 3-4 minutes or until hot. Serve1 cup vegies over 1/2 cup rice. Makes 6-8 servings.
