Introduction

Number of Servings: 14

Ingredients

    1 medium onion, diced
    1 medium bell pepper, diced
    6 oz fresh mushrooms, sliced
    6 garlic cloves, minced
    30 oz canned tomato sauce, low sodium
    28 oz canned whole peeled tomatoes, chopped
    2 Cups water
    1 tsp dried basil
    1/2 tsp thyme
    1/2 tsp oregano
    ground black pepper to taste
    a few splashes of hot sauce (to taste)
    1 TBS olive oil
    1 cup of lentils

Directions

In a large pot, saute onions & peppers in the olive oil, add mushrooms & garlic. Add remaining ingredients bring to a boil. Reduce to medium low & cover. Stir occasionally. Simmer for 45 minutes.

Serve over cooked pasta,

approximately 14 servings.

    Really decent. I added fresh parsley to this also and instead of green bell pepper i used hot peppers for the taste. - 1/20/13
