Ingredients

    1 medium-large gold potato (2.5 inches x 3.5 inches)
    1 green onion
    1/8 cup lowfat vanilla soy milk

Directions

Cut potato into small pieces. Boil potato pieces until tender. Slice green onion into small pieces. Toss green onion into potato pan during last 1-2 minutes of cooking. Drain potatos/onions, return to pan. Mash potatos/onions with potato masher. Mash in milk, stir until creamy. This combination gives me creamy, salty tasting potatoes that taste just like my moms (who cooks hers with loads of butter and salt). Gives one generous serving, or two small servings.
