Ingredients

2.5 cups flour
2.5 teaspoons baking powder
1 teaspoon salt
1 cup root beer
2 teaspoons root beer extract
1.5 cups sugar
1 cup margarine
4 eggs
optional frosting
1 12 oz. whipped fluffy white frosting
2 teaspoons root beer extract
Directions
0. Preheat oven to 350 degrees
1. Mix Flour, Baking Powder and Salt.
2. Mix Root Beer and Root Beer Extract
3. Mix Margarine and Sugar. Beat until Fluffy.
4. Add eggs and mix until smooth.
5. Alternatively add #1 and #2 above until well mixed.
6. Place mini-cupcake paper cups in mini cupcake pan. Fill until each one is 2/3 full. (alternatively grease each cupcake pan with margarine and place a little flour in each holder)
7. Bake at 350 degrees for 15 minutes. Poke with toothpick to see if done. If no batter sticks to toothpick, cooking is complete.
Makes 72 mini cup cakes
Optional frosting - not included in calorie count. Mix 2 teaspoons of root beer extract with 12 oz of whipped fluffy white frosting. Wait for cupcakes to cool and top with frosting. Adds about 20 calories per cupcake.
Other options:
Pour batter in 9 x 13 pan and cook at 350 for 30 minutes
Make regular size cup cakes. Makes about 18. Bake for 30 minutes.
