Introduction

Ingredients

    1/2 Cup Coconut, shredded
    1/2 Cup Almonds, slivered or chopped

    1 box Chocolate cake mix, prepared*

    1/2 package fat free cream cheese (4 oz)
    1/2 cup powdered sugar
    8 Tbsp Immitation butter**
    Skim Milk to smooth (about 1/4 cup)

    *It helps the calorie count to use eggbeaters, and instead of vegetable, substitute sugar free apple sauce.

    **I use Promise Heart Smart immitation butter spread. It's only 5 calories/serving. Using margarine will increase the calories.

    OR to lower the calories and fat...use this recipe for cream cheese frosting instead of the frosting in this recipe.

Directions

1. Spray a 9/13 cake pan with cooking spray and preheat the oven to 350.
2. Mix the coconut and almonds and spread it in the bottom of the pan.
3. Pour the cake batter on top of the nuts
4. Cream together Cream cheese, powdered sugar, butter spread, and milk.
5. Drop cream cheese mixture by spoonfulls at random over the cake (do not spread)
6. Bake according to box instructions Remove from oven and watch the cracks begin!

Leave in pan. Do not ice cake.
