Introduction

Don't let the prep time scare you. This is one of those recipes you can do a little at a time or prep ahead and do as a "dump" soup.
This is a soup full of great flavor and vitamins. Super for when you have colds in your house or just need a good hearty soup to warm your insides. If you like thick soup, this is a good one, it is almost a stew, or a stoup as Rachel Ray would call it. This does take a large crock or stew pot to prepare.
If you don't have a crockpot but do have a large cast iron pot you can also make this in the oven just setting your oven at 375 instead of high on a crockpot.

Ingredients

    1 Roasting Chicken (smoked if you wish)
    3 boxes of Chicken Broth
    3-4 chopped carrots
    1 fresh onion, chopped
    3 stalks Celery, chopped
    3 medium potatoes, chopped
    6 cups shredded Cabbage (I use 1 bag shredded slaw mix)
    2 cups dried northern beans
    1 pkg Trader Joes Cumin & Chili Chickpeas
    1 cup Trader Joes Three Grains Blend
    1 Tbsp dried Parsley
    1 tsp dried Basil
    1 tsp dried oregano

Directions

Makes 10-20 portions depending on if you are using it as an appetizer or as a dinner. I set it at 12 and that makes for big, hearty servings.

1) Roast or smoke your chicken. Remove chicken from the bones and chop. Place in refrigerator until needed.
2) Rinse beans and pick out the bad ones. Place in crockpot on high with 2 boxes of chicken stock.
3) Cut veggies and place in pot on stove with remaining box of chicken stock and cook on low for 1 hr. Allow to cool.
4) When beans are nearly done cooking add chopped chicken and remaining ingredients. You may need to add more stock or water.
5) If your family is "picky" you may puree the stewed veggies and place them in the soup. If they are not, just add them all to the pot along with the broth they were cooked in.
