Ingredients

    1 lb.chicken breasts, boneless and skinless
    4 oz. Mozzarella cheese, part skin
    1 servings Hunt's diced tomato with basil, garlic and oregano
    1 tab extra light olive oil
    4 cups fresh spinach
    1cup sliced mushrooms
    1 cup cooked couscous
    1/4 cup white wine (optional)

Directions

Saute chicken in nonstick frying pan with 1 tab of water approx 3minutes each side. Add mushrooms and tomato sauce and cook on medium heat for several minutes longer. Add spinach and cook until wilted . Add 1/4 cup of white wine, place cheese on each piece of chicken. Cover fry pan, remove from heat. Serve when cheese is melted. Spoon onto cooked couscous. Serves 4
