Introduction

Tastes just like a blueberry muffin! Tastes just like a blueberry muffin!
Number of Servings: 24

Ingredients

    1/2 cup All-Pupose Flour
    1/2 cup Whole-wheat Flour
    1/2 cup Splenda
    1/2 cup Brown Sugar
    1 tsp Baking Powder
    1/2 tsp Baking Soda
    1/2 tsp Salt
    2 Tbsp butter
    1 egg, large
    1/4 cup unsweetened applesauce
    1 tsp vanilla extract
    1/2 tsp ground cinnamon (apple pie spice is good too!)
    1 1/3 cup rolled oats
    1/3 cup dried blueberries

Directions

In a medium bowl, combine dry ingredients, except rolled oats. Set aside.
In mixer, cream butter, Splenda, and brown sugar. Add in egg, applesauce and vanilla extract; mix on low speed. Add in dry ingredients and mix on low.
By hand (the mixer blade will cause sticky not-set-up cookies!), mix in the rolled oats and dried blueberries.
Drop by teaspoonfuls onto a cookie sheet sprayed with cooking spray (such as Pam). Bake at 375* for 10-12 minutes or until the cookies are light golden brown. Do not over bake!
Make 24 single-cookie servings.
