Ingredients

    3 cups Old Fashioned Oatmeal
    1/2 cup Chopped Pecans
    1/2 cup Shredded Coconut
    3 Tbsp Canola oil (or oil of your choice)
    1/4 cup Honey
    1/4 cup packed Brown Sugar
    1 Tbsp Water
    1 tsp Vanilla

Directions

Preheat oven to 275 degrees. Lightly oil a 13x9 inch pan.
Mix together oatmeal, pecans, and coconut. Set aside.
In a small heavy saucepan mix together all remaining ingredients. Bring to a boil and simmer 2-3 minutes, until well mixed. Pour over dry ingredients in bowl. Mix well.
Pour into prepared pan and bake 60 minutes, stirring every 15 minutes.
Remove from oven and cool completely, stirring occasionally. When completely cool, store in airtight container.
Makes about 16 1/4 cup servings.
