Ingredients

    .5 cup light ricotta
    8 oz chicken breast, ground
    8 oz whole wheat penne
    .75 cup mozzarella cheese, shredded, .25 cup reserved for topping.
    1 jar spaghetti sauce
    fresh basil
    minced garlic
    dried oregano
    2 cups fresh spinach, roughly chopped

Directions

Cook pasta according to directions, but for only half the amount of time. Drain and set aside.

Brown chicken, fresh basil, oregano and garlic in a skillet. Mix spinach, ricotta cheese, 1/2 cup of the mozzarella cheese and sauce in a large bowl. Mix in chicken mixture and stir until coated.

In a medium sized casserole dish layer 1/2 of the pasta, 1/2 of the chicken mixture, rest of the pasta and rest of the chicken mixture. Top with the remaining cheese and cover with lid or tin foil. Bake at 375 for 30 minutes.

Serves 5 at 1cup servings.
