Introduction

I combined recipes to come up with this, and it disappears in a flash every single time. I use a bit of the pineapple juice to thin the mayo just a bit for the dressing. Ingredients

    2 lbs cooked chicken
    2 cups seedless grapes sliced in half
    1 can pineapple chunks or tidbits (drained)
    2 cups chopped bell peppers red, yellow and green
    1/2 cup diced green onions, white and green parts both
    1 can sliced water chestnuts drained
    1/3 cup toasted pecans
    1/2 cup light mayo
    1/2 cup light sour cream
    salt and pepper to taste

Directions

Start with cooked chicken ready to use. Chop into bite size pieces. Mis the mayo and sour cream or greek yogurt. Thin just a bit to your desired consistency with the reserved pineapple juice. Add all the other ingredients and mix well..

    I was looking for something different to take for a pot luck. Tastes delicious. Subbed sliced almonds for pecans. I'm thinking I just may add come chopped cilantro to whatever is left over to see what that does to the mix. I love cilantro and think it may be a hit. Thanks for sharing Dawn. - 2/5/11
