Introduction

Ingredients

    2 cups all purpose flour
    2 tbls brown sugar paked
    1 tbls baking powder
    1/2 tsp salt
    1/2 tsp ground cinnamon
    1/4 tsp baking soda
    1/2 tsp pumpkin pie spice
    1 1/2 cup skim milk
    1 cup canned pumkin pie mix (canned pumpkin or cooked mashed pumkin will do but will be less sweet without syrup)
    1/2 cup egg beaters
    3 tbls unsweetened applesauce
    1 tsp vanilla extract (could use maple flavoring if not using maple syrup but would want to decrease amount its stronger than vanilla extract)

Directions

1 In a mixing bowl combine the 1st 7 ingredients. In another bowl combine remaining ingredients. Add pumpkin mix to flour mix stir until completely combined.
2 Heat a lightly greased griddle or heavy pan over medium heat until a few drops of water dance across surface. For each pancake pour 1/4 cup of mix on griddle. If mix is thick spread batter to app circle app 4 inches in diam.
3 Cook over medium heat until pancakes are golden brown, flipping to cook when surface is bubbly and edges are slightly dry. app 1-2 min per side. Serve immediately or keep warm in loosely covered ovenproof dish in a 300 degree oven. Makes app 19 pancakes. 1 per serving for nutrional info.
