Ingredients

    Reduced Fat Sharp Cheddar Cheese, coarsely shredded, 8 oz
    flour, white, all-purpose, 1 cup
    Butter, unsalted, room temperature, .5 stick
    Ice cold water, .25 fl oz (or as much as needed)
    Pepper, red or cayenne, 1 tsp (or to taste)

Directions

Combine cheddar and butter in a food processor and pulse until combined. Add flour and pepper and pulse until combined, dough should be pebbly. Gradually add water while pulsing the food processor. Do not over mix. Dough should be soft yet pebbly. Remove dough from processor and form into a disc, wrap in plastic wrap and refrigerate for at least an hour.

Preheat oven to 375˚. Divide chilled dough in two. Roll out to 1/8 inch or less sheets and slice into one inch squares. A pizza cutter works well for this. Place squares on parchment paper lined baking sheets and bake for 17 minutes or until just browned. Watch carefully, just browned turns into burned quickly with the small crackers.

Makes approximately 15 dozen crackers. 6 Crackers per serving.

    I make something very similar (much less cayene pepper) but there is no way I've made 30 servings from it! :) - 5/3/11
