Ingredients

    1 tbsp extra-virgin olive oil
    1 thinly sliced small sweet onion
    2 thinly sliced celery stalks
    2 minced garlic cloves
    pinch of salt
    pinch of freshly ground black pepper
    1 large bunch chopped kale leaves
    1/2 lb cubed boneless skinless chicken breast
    4 cups lower-sodium chicken broth
    3 tbsp finely chopped parsley

Directions

In a medium saucepan, heat olive oil over medium heat. Add onion, celery, garlic, salt, and pepper. Cook, stirring occasionally, until onion softens, about 7 minutes. Add chopped kale leaves. stir and cook for 1 minute. Add cubed chicken; stir and cook for 1 minute longer. Add chicken broth, bring to a simmer, and cook until chicken is cook through, about 7 minutes. Stir in chopped parsley. Serve hot.

    I think with the addition of white or calico beans this would be a much more filling dish. Beans are considered very healthy on the SB diet plan in every phase. - 12/6/12

    Very Good
    Great tasty soup, only downside it didn't keep me full long. Love the kale and chicken. I added cilantro instead of Parsley as I was out. - 6/17/11
