Ingredients

    3-3oz cans White Chicken Breast
    1/2 to 1 C Snow Peas, chopped
    1/2 to 1 C Red Bell Pepper, chopped
    1/2 to 1 C Yellow Bell Pepper, chopped
    1 Tbs Jalapeno pepper, diced into small pieces (about 4 slices from one pepper)
    2 Tbs Ground Flaxseed
    1/2 C Carrots, chopped into thin slices
    3 Clementine Mandarin Oranges, sectioned and cut in half
    1 Tbs Extra Virgin Olive Oil
    3 Tbs Lemon Juice
    1 Tbs Apple Cider Vinegar

Directions

Mix all chicken, chopped peppers, chopped snow peas and chopped carrots in medium to large bowl. Add in Clementines and mix lightly to release the juice from the oranges. Add flax seed, olive oil, lemon juice and vinegar. Mix to distribute and refrigerate for 1 hour.

Can substitute almost any vegetable on hand. Add more or less lemon and vinegar to taste.
