Ingredients

    1/3 c. white cooking wine (I used Holland House Light White Cooking Wine)
    1/3 c. water
    4 chicken leg quarters
    2 tsp. dried rosemary
    1/2 tsp. dried basil
    1 lime

Directions

Start by soaking the chicken in warm water. In the meantime, pour cooking wine and water into the bottom of a 13 x 9 inch baking pan. Take chicken from water and place in pan. Coat with rosemary and basil, then top with sliced lime (or juice from 1 lime, if you prefer). Cover with foil and bake in a 350 degree oven for 90 minutes or until juice no longer comes from chicken when stuck with a fork or toothpick. If you prefer browned chicken, uncover and return to oven for an additional 10-20 minutes.
