Ingredients

quick oats
butter
coconut oil
stevia
eggs
vanilla extract
flax
chocolate baking chips
baking soda
Directions
Makes 60 cookies when prepared in approx. 1" balls.
Melt coconut oil and butter then add to mixer. Mix in stevia 48 tsp=1 CUP). Blend in eggs, vanilla, flax, baking soda then slowly add ground quick oats (blended/food processed to the consistency of flour). Add the bag of baking chips (I used milk chocolate) and blend into mixture
Heat oven to 350 degrees
Lightly spray cookie sheet and roll out cookies into 1" balls then with a spatula flatten them as the cookies do not flatten out on their own in the oven.
Bake at 350 degrees for about 8-10 minutes. If you like crunchy cookies cook longer.
