Introduction

Ingredients

    2 tbsp. canola oil
    2 cups white cornmeal
    1 tsp baking soda
    1/2 tsp, salt
    2 eggs, slightly beaten
    1 cup soy milk (mix in 1 tsp. vinegar to resemble buttermilk)

Directions

In a 9 inch cast-iron skillet, heat oil while oven pre-heats and batter is being prepared.

Combine cornmeal, baking soda, and salt in medium mixing bowl. Add eggs and butter(soy)milk, and stir until just moistened. Do not over mix the batter.

Remove skillet from oven and tilt to be sure oil is distributed evenly. Pour batter into hot skillet, and bake in oven at 350 for 20 - 25 minutes or until fork comes out clean.

Makes 8 servings
