Introduction

Ingredients

    1.5 C Red Kidney Beans
    1.5 C Canned Peas & Carrots
    1.5 C Canned Cut Green Beans
    4.0 C Beef Broth
    1.0 C Tap Water
    2.0 C Chopped/Diced Onions
    3 tbsp Salsa
    1 fl oz White Wine (optional)
    2 tbsp black pepper
    1 tbsp Extra Light Olive Oil

Directions

*Serves 10 (depending on how much veggies you add or subtract*

Heat Stove Top to Medium-High.

In a large pot, add Olive Oil & Diced Onions. Bring to a sautee & add the salsa and white wine (optional). This will probably steam heavily so once it dies down (approx. 30 seconds) add the beef broth. Immediately add your remaining vegetables (you can vary them if you favor something else) and your beans. Sprinkle in your black pepper. Top off with 1 cup water.

Let it sit on Medium with a lid for about 20 minutes to let your veggies soften (you can let it sit for as long as you'd like on low).

Enjoy with some breadsticks or a side salad! Freezes very well and is so easy to make with canned veggies... you can substitute the salsa with canned tomatoes or even tomato juice! There are a ton of variations to make this your own!
