Introduction

Tons of veggies, fiber, and protein all for a low cal filling soup. Sub a low sodium stock and reduce the amount of salt per serving! Ingredients

    1 lb lean ground turkey
    1 medium onion, chopped
    2 garlic cloves, chopped
    1 zucchini, diced small
    2 carrots, chopped small
    2 cans of navy beans, rinsed and drained
    2 cups of chicken stock, no salt added preferabley
    6 cups of water
    1 ounce can of no salt added tomato sauce
    Fresh ground pepper (to taste)
    1 tsp of oregano
    1 tsp of basil

Directions

Brown turkey meat, and drain off any fat. Add back to pan, and over medium heat, add veggies. Saute until onions are translucent. Add spices and sautee for 3 minutes. Add chicken stock, tomato sauce, and water. Bring to boil, and then reduce to simmer for 20 minutes. Stir occasionally.

Makes 10-1 cup servings.
