Introduction

When you have one of those days and just need something that makes you feel good, this one does the trick. A bit higher in calories than my usual dinner but sometimes you just need a little comfort! Ingredients

    14-16 oz turkey smoked sausage
    1/2 lb boneless, skinless chicken breast
    1 can cannellini (white) beans, rinsed and drained
    1 can no salt added diced tomatoes, drained
    14 oz chicken broth
    spices to taste
    1 box Jiffy cornbread mix
    3/4 cup skim milk

Directions

Preheat oven to 400. Slice sausage into half circles. Brown in large skillet and set aside. Cook chicken in same skillet until done, then add sausage back in. Add beans, tomatoes, broth, and desired spices to skillet and boil. Place in 2-2.5 quart baking dish. Mix cornbread and milk and pour over top. (Looks messy!) Bake 30-35 minutes. Remove from oven and let set for 10 minutes. Eat, feel comforted!
