Ingredients

    2 cups diced potatoes (red or new)
    2 tbsp. EV Olive Oil
    sea salt
    minced garlic
    rosemary or oregano
    black pepper

Directions

Mix potatoes, oil and seasonings to taste. Let sit for 5-10 minutes. Roast on a baking sheet in one layer for 45 minutes at 350. Stir halfway through baking time.

    Very Good
    Yummy! We didn't have red or new potatoes so we just used your average potato instead. This required about 6 more minutes cooking time. Very filling and simple to make. Thank you! - 6/12/09
