Ingredients

4 cups water
2 cups canned crushed tomato
6 lamb shanks
1 onion sliced
5 garlic cloves whole
4 carrots sliced
1 parsnip sliced
1/4 head of cabbage diced
1/2 small rutabaga diced
1 celery stalk diced
1 cup celery root diced
2 bayleaf
4-5 juniper berries (can be omitted)
.5 tsp tarragon
.5 tsp oregano
1 tsp red pepper flakes
.5 tsp black pepper crushed
salt to taste
Directions
serves 6 (4 oz meat each)
In large pot add the water ,meat ,spices , vegetables and chopped tomato.
Bring to a boil , lower heat let simmer for apx. 2 hours,or untill meat is really tender.You can remove meat from bones before serving,to make sure the weight is correct.
Serve with rice or potatoes.Even just a salad.
