Introduction

Ingredients

12 ozs cooked ground chuck
4 oz chopped smoked turkey sausage, browned
8 oz sliced and sauteed baby bella mushrooms
Ms. T's Homemade Marinara Sauce (or use can use jar
marinara sauce)
8 Healthy Harvest Whole Wheat Blend Lassagna Noodles
(ea noodle=1 oz) - uncooked
4 ozs ricotta or cottage cheese ( I sometimes use both 2
ozs of ea)
1 ex large egg, beaten
1 oz shredded ex-sharp cheddar cheese (can also use
reduced fat----I prefer regular)
2.5 ozs shredded parmesan cheese
4 ozs Italian blend finely shredded cheese
4 oz Mozzarella Cheese finely shredded
NOTE---you will need the following utensils: 9 by 13 inch (3
quart) glass casserole dish or deep dish aluminum foil
pan, a medium sauce pan and a small mixing bowl
Directions
In small bowl beat egg remove white particle, add ricotta/ cottage cheese, mix well--next add shredded sharp cheese, mix well and set aside
In skillet brown ground chuck, in same pan push beef to side make a small area for smoked sausage, brown then mix both meats together.....(also if you would like to add any type of vegetables, now would be the time) continue cooking until ground chuck is completely done
In sauce pan add marinara sauce and half of meat mixture
and cook for at least 5 minutes
Assembling the lassagna: In casserole dish layer bottom of dish with marinara meat sauce, next layer with 3 lassagna noodles--line up with short side of pan---you should then have space to take a lassagna noodle break in half for the space that's left---next spread egg mixture on top of noodles---add 1/2 of other half of ground beef mixture--next add 2 ozs of each shredded cheese and 1/2 of parmesan cheese and 1/2 of marinara sauce---add last layer of noodles--last of ground beef mixture, and re-mainder of sauce cover entire of casserole with remaining cheese beginning with parmesan, and ending with mozzarella.
Bake for 30 minutes or until cheese is semi-golden brown
Remove from oven and let cool for at least 10 minutes.
Make 10 nice size square pieces
