    Butternut squash, cubed. 3 cups
    Cauliflower, cut into flowerettes. 3 cups
    Brussels Sprouts. 2 cups (optional)
    Olive oil. 3 T
    Curry Powder. 2 T
    Salt to taste


Place olive oil, curry powder, and salt in a large baking dish. Mix well. Toss in vegetables and stir until coated lightly.

Bake at 400 for 45 minutes, stirring occasionally.

Makes 8 side dish servings, or 4 main course sized servings.
