Ingredients

    1.5 tbls olive oil
    6 boneless skinless chicken thighs (1 1/3lb)
    4 medium green onions, sliced (1/4 cup)
    2 tsp dried rosemary (2 tbls fresh)
    2 tsp dried parsley (2 tbls fresh)
    3/4 tsp dried thyme (2 tsp fresh)
    2 cloves garlic, finely chopped
    1 red jalapeno chili, seeded and finely chopped
    1 cup sliced White or shiitake mushroom
    1 cup dry white wine
    1 tbls balsamic vinegar
    2 tsp dried currants (a type of greek raisin)
    1/2 tsp salt
    1 1/2 cup steamed broccoli

Directions

1. In 12 inch skillet, heat oil over medim heat until hot. Cook chicken, green onions, rosemary, parsley, thyme, garlic and chili in oil 12-15 minutes, turning chicken occasionally, until chicken is brown.

2. Add mushrooms, 1/2 cup of the wine and the vinegar, Heat to boiling; reduce heat. Simmer uncovered about 5 minutes or until about half of the liquid has evaporated.

3. Pour remaining 1/2 cup wine over chicken; sprinkle with currants and salt. Cover and simmer aobut 10 minutes or until juice of chicken is clear when center of thickest part is cut (180 degree F). Uncover and cook 5 minutes longer.

4. Divide chicken and sauce among 3 plates. Divide broccoli among plates.

Serves 2 thighs and 1/2 cup of broccoli to 3 people.
