Introduction

Not the most healthy dish, but if eaten in moderation with healthy sides, it is delicious! I refrain from french fried onions for the topper. We have enjoyed it in a whole wheat bulkie roll as a burger and as a meatloaf with baked potatoe and vegetable. Ingredients

    ground beef
    8 slices of bacon
    8 oz. low fat sharp cheddar (shredded)
    1/2 C bread crumbs
    2 eggs
    1/2 C low fat mayo
    1/2 C ketchup
    2T mustard
    T salt
    T pepper

Directions

- Cook bacon in 350 degree oven until crisp, remove and place on paper towels to absorb fat. Place aside. When cool, break into peices.
- Mix ground beef, bacon, salt, pepper, cheddar, bread crumbs, mayo, 1/4C ketchup, and 2 eggs.
- press mixture into a 9x5x3inch baking dish.
- Mix remaining 1/4C of ketchup and 2T mustard in a side dish and spread over loaf. Bake for 40 min.
- Top with french fried onions. Bake additional 10-15min or until no longer pink.
