Ingredients

    1 tsp olive oil
    1/2 medium peach, diced
    2 T chopped pecans
    2 eggs
    1 T unsweetened applesauce
    1/8 tsp ground cinnamon

Directions

Makes 1 serving

Heat olive oil in small skillet over medium heat.
Dice peach / chop pecans - Add to skillet and stir fry 2-3 minutes or until peaches soften.
Meanwhile: Crack eggs in bowl, add applesauce and cinnamon. Beat well.
Add egg mixture to skillet. Mix often.
When eggs set, serve and enjoy.

    Next time I will use whole peach and leave out applesauce. - 2/14/11

    Very Good
    Used canned peaches, omitted the applesauce and added a couple tablespoons of flax seed. Drizzled a little maple syrup on the final product. Not a bad substitute for oatmeal. - 1/26/17
