Introduction

These were inspired by a muffin I got in Dallas one day...moved to New Orleans, could not find them, so I invented my own version. I think these are better! Ingredients

    *Quaker Quick minute Oatmeal, 4 cup
    Oat Bran, 2 cup
    *Whole Wheat Flour, 1 cup
    Baking Powder, 4 tsp
    Baking Soda, 3 tsp
    Brown Sugar, 1 cup, packed
    Pie fillings, canned, apple, 1 can (21 oz)
    Cinnamon, ground, 1 tbsp
    Walnuts, 2 cup, chopped
    Egg, fresh, 1 large (remove)
    *Milk, 2%, 2 cup (remove)

Directions

chop walnuts and apple pie filling into small pieces, mix all other ingredients in a large bowl according to typical muffin recipes, stirring the dry ingredients together and then adding the wet to that, add chopped walnuts and apple pie filling last, you want a thick wet batter that holds its shape, divide into 24 muffin tins sprayed with non-stick spray or muffin cups, bake 25 minutes and test for doneness. May take a bit longer!
