Yummy lemon chicken with artichokes, mushrooms, and green beans.

This is a recipe is enough for both myself and my husband for filling healthy dinner! I enjoy tinkering around in the kitchen and just threw this together last night. It was great!
Yummy lemon chicken with artichokes, mushrooms, and green beans.

This is a recipe is enough for both myself and my husband for filling healthy dinner! I enjoy tinkering around in the kitchen and just threw this together last night. It was great!

Ingredients

    • Olive Oil, 1 tbsp (remove)
    • Chicken Breast, one large breasts or 4-6 small tenderloins. Note: I buy the Tyson frozen tenderloins.
    • Artichoke hearts, frozen and thawed, 1 package (9 oz) Note: I roughly chop the artichokes.
    • Mushrooms, fresh, 1 cup, pieces or slices
    • Green Beans (fresh), 1 cup
    • Lemons, 1 fruit juiced without seeds
    • Oregano, ground, 1 tsp
    • Thyme, ground, 1 tbsp
    • Salt, 2 dash
    • Pepper, black, 1 tsp
    • Garlic, 2 cloves minced
    • Whole Wheat penne pasta, 2 cups

Directions

I season the chicken with salt and pepper. I then saute the chicken in a pan first with the oil and garlic. This is the point where i add the thyme and oregano (to taste). I then add everything else into the pan and let it simmer which allows the green beans and mushrooms to cook a bit. You may want to add a bit more salt and pepper to taste at this point. About halfway through the simmer process I juice the lemon into it. The mixture of olive oil, lemon, and garlic make an excellent sauce. I eat it over whole wheat pasta but if you are carb conscious just skip the pasta!
