Ingredients

    Chicken Thigh, 6 , bone and skin removed
    Zucchini, 1 cup, sliced
    Celery, raw, 1 cup, diced
    Onions, raw, 1 cup, chopped
    Carrots, raw, 1 cup, chopped
    Stewed Tomatoes, Canned, No salt, 2 Cups
    Salt, 1 tsp
    Jalapeno Peppers, 2 pepper
    Rosemary, dried, .5 tsp
    Spinach, frozen, 1 package (10 oz)
    Garlic, 3 cloves
    Italian Sausage, pork, 1 link, 4/lb


Directions

Prepare and combine all ingredients in large stock pot. add water to cover plus approx. 1 inch. Bring to a boil on high heat then reduce to low heat for until chicken is cooked through, approx. 35-40 minutes.
