Ingredients

2 cups water
3/4 cup uncooked pearl barley
4 medium onions, chopped fine
2 celery ribs, chopped
1 TBS olive oil
4 cups fresh sliced mushrooms of your choice
8 cups reduced sodium vegetable broth
2 cups sliced carrots
1 (6 oz) can of tomato paste
1/2 tsp salt
1/4 tsp black pepper
1/2 cup minced fresh parsley
1 can creamed corn
Directions
Place all of the ingredients except parsley in a large slow-cooker. Cook on high for 6-8 hours. Add parsley just before you serve.
