Number of Servings: 8

Ingredients

    900 ml Beef Stock Reduced Sodium (1 Tetra Pack)
    2 Cups Fresh Beets, Peeled and Diced
    1/2 cup chopped Onion
    1 Tbsp Olive Oil
    3 plum tomatoes, skinless, chopped
    1 stalk Celery
    1 Cup finely chopped cabbage
    Black Pepper to taste
    Dill weed

Directions

Place tomatoes in boiling water for 30 seconds. Let cool and remove the skin. Dice.

Saute onion in olive oil until soft
Add the rest of the ingredients and simmer 50-60 minutes until beets are cooked

Makes 8-10 one cup servings

Can be served with sour cream if desired.
