Ingredients

3 (burrito size) Low carb Tortillas (quartered)
1.2 lbs Ground Turkey (typically one package)
Can diced tomatoes (no salt added)
Cup salsa (any)
2 cups green/yellow/red peppers
1 med/large onion
2 Jalapeno Peppers
2 cans refried beans
1 Cup shredded cheese
2 teaspoons Cumin
1 tablespoon chili powder
1/2 teaspoon Cayenne pepper (optional)
salt and pepper to taste
Directions
Makes 8 servings.
Preheat oven to 350
Cook turkey in LARGE pan (I use giant sautee pan), once browned, add diced peppers, onions and chopped jalapenos. Add tomatoes (do not drain), and let simmer to soften the vegetables. add spices to simmering mix. Once vegetables have softened, add salsa and two cans of beans, reduce the heat (or things will splatter everywhere). ONce combined turn off heat.
In a 9x13 pan, spray bottom and add a layer of mixture. Top mixture with tortillas. Add another layer of mixture and cover again with tortillas. Finally, add remaining mixture and top with cheese. Place uncovered in oven for 20-30 minutes until bubbly. Top with avocado slices, salsa or sour cream and enjoy!
