Our family's favorite for cold, wintry days.

Quick tip: I used frozen potatoes which have been diced for hash browns. I also use frozen corn.

Ingredients

    1 lb smoked sausage, halved and sliced thin
    1 onion, quartered and sliced thin
    4 c potatoes
    3 c water
    2 tsp dried parsley
    1 t dried basil
    1 t salt
    1/8 t pepper
    15 oz canned corn, drained
    14 oz cream-style corn
    12 oz evaporated milk

Directions

1. In a soup pot, over medium heat, brown sausage and onion.
2. Add potatoes, water, and seasonings. Simmer for 15 minutes or until potatoes are tender.
3. Add corn, cream-style corn and evaporated milk. Heat thoroughly, about 10 minutes.
4. Makes about 10 1-cup servings.
