Ingredients
-
1T Olive Oil
1 med. Onions diced
1.25 lbsJennie-O Extra Lean Ground Turkey
1t Ground Anise
2t Onion Powder
2t Chilli Powder
1t Garlic Powder
1/4t Pepper
2 - 14.5oz cans Petite Diced Tomatoes
2 Med. Zucchini diced
2 - 14.5oz can Black Beans drained and rinsed
1 - 10.75oz can Chicken Broth 99% Fat Free
1/8c. (or half packet) McCormicks Taco Seasonings
Directions
Heat dutch oven over medium heat and add olive oil. Reduce heat to medium/low. Add diced onions and a pinch of salt to heated olive oil, and saute on medium/low for about 2 - 3 minutes or until translucent.
Add ground turkey and break apart. While still pink, add ground anise, onion powder, chilli powder, garlic powder and pepper. Cook breaking apart until almost cooked through.
Add remaining ingredients to pot, mix together well. Increase heat to high until it comes to a slow boil. Cover and reduce heat to med for about 10 - 15 minutes, or until meat is cooked thouroughly and zucchini are soft.
- This recipe is a little bit soupy (the way I like it), but for a thicker chilli reduce or remove broth.
* To reduce sodium intake, replace Taco Seasoning with 2T Chilli Powder, 1T Onion Powder, 1T Garlic Powder & 2t Cumin.
** This chilli is great with tortilla chips or with a little shredded cheddar cheese on top.
