Introduction

Ingredients

    Pork Spareribs, 2 lbs
    Onions, 3 medium
    Red Potato, 5 medium
    Apples, fresh, 2 medium
    Red Cabbage, ½ small head (4" dia)
    Chicken Broth, 2 cups
    White Wine, 6 fl oz
    Olive Oil, 2 tbsp
    Pepper, black, 3 tsp
    Corriander, 2 tsp (
    Bay Leaf, 3 whole
    Dill weed, dried, 1 tsp

Directions

Sear 2-3" pork chunks in non-stick pan with a little oil, black pepper and corriander. Deglaze with about 1 cup of white wine and transfer to slow cooker. Sautee onion till translucent and add to pork. Cube potato and apple into 1" pieces and add to pork also. Throw in a couple dried bay leaves, more black pepper and corriander to taste. Cook on low for about 12 hours.

Just before serving shred cabbage and cook in non-stick pan with pepper and dill for about 2-3 minutes. Add about 1 cup of white wine and simmer covered for another 5 minutes.

Add cabbage to stew and serve with dark rye bread.
