Ingredients

1/4 of a large head of cauliflower
2 tablespoons shredded Parmesan cheese
1/3 cup shredded cheddar cheese, divided
1 large egg
1 tablespoon hummus
1/4 cup baby spinach leaves
2 tablespoons roughly chopped roasted red peppers
3 sundried tomatoes, sliced finely
2 tablespoons roughly chopped marinated artichoke hearts
3 large Kalamata olives
Directions
Preheat oven to 450F (220C)
1. Toss the cauliflower into a food processor and pulse until finely crumbled.
2. In a medium sized bowl, mix cauliflower egg, Parmesan and 2 tablespoons of the cheddar cheese, fresh ground black pepper and kosher salt to taste, until very well combined.
3. On an oiled cookie sheet, shape the cauliflower mix into a 8"-9" circular crust and bake for 12-15 minutes, until the edges are just golden brown.
4. Let the crust rest for about 5-10 minutes while you prepare the toppings.
5. Spread the crust with the hummus.
6. Spread the spinach leaves out evenly over the hummus.
7. Sprinkle the peppers, olives, artichoke hearts and sundried tomatoes evenly over the spinach.
8. Top with the remaining shredded cheddar and bake for another 5-8 minutes, just until cheese is melted.
9. Enjoy!
