Introduction
Not as nasty as you would imagine by the description. Silken tofu is a great substitute for the oil and eggs normally used in cake and brownie mix. (Thanks to other SparkUsers for this tip!) Ingredients

1 Pkg Brownie Mix (I used Pilsbury, but any family size (for a 9 x 13 pan) will do!
200 grams (about a half package) silken tofu
1/4 cup cold coffee or water
1 tsp vanilla extract
Directions
Place tofu, water or coffee, and vanilla in a bowl and mix with a stick blender until completely blended ( will be the consistency of melted ice cream-you can use a food processor or stand blender if you want)
Add brownie mix and stir until blended. Pour into 9x13 cake pan and bake as directed on box, or at 350 degrees for about 30 minutes, until a toothpick inserted into center comes out clean.
Makes 18 brownies; serving size is one brownie.
