Introduction

Goes well with most meats. I usually serve with chicken or fish. I love to use my pressure cooker to cook chicken thighs, strip the meat off the bones after cooked and add the meat to the polenta. Ingredients

    Dry Polenta, 1 Cup
    boullion, 3 tsp
    water, 4 cups
    garlic, 4 cloves
    Olive Oil, 1 tsp
    onion, 1/2 med
    spinach, 1 cup
    diced, canned tomatoes, 15oz, drained
    marscapone cheese, 1/4 cup
    Pepper, 1/4 tsp

Directions

Heat olive oil in pan, add onion and saute until just translucent. Add garlic until fragrant. Add water, and bouillon and stir until well dissolved and boiling. Add red pepper. Slowly mix in polenta until well blended. Cook, stirring constantly about 20 - 25 minutes or until polenta is cooked. Turn down the heat, add the spinach and tomatoes and mix well. Add the marscapone and mix until incorporated. Season with salt and pepper to taste.
