Ingredients

3 large pears
75g millet
75g brown sugar
3/4 pint milk
1 tsp cinnamon
25g flaked almonds
1 tsp sunflower oil
Directions
Heat oil.
Toast millet in oil over medium heat for 5 mins.
Add milk, 50g of sugar and cinnamon.
Bring to boil.
Cover and simmer for 20 mins, stirring occasionally.
Once light and fluffy, cool.
Separate the egg.
Mix the egg yolk into the millet mix.
Whisk the egg white and fold carefully into the millet mix.
Core and slice pears.
Mix pears, rest of sugar and almonds.
Oil a 1lb loaf tin.
Put half the pear mix in the bottom.
Add half the millet mix.
Put rest of pear mix on.
Top with rest of millet mix.
Bake for 30-40 mins at 180 degrees, until golden brown and firm to touch.
Garnish with couple of pear slices, grapes and fresh mint leaves.
Serve hot or cold, on its own or with yoghurt, creme fraiche or cream.
